Our local variety of zucchini, called “romanesca”, are soused in vinegar, spiced and seasoned with extra virgin olive oil. They’re ideal to try as a side dish, a hors d’oeuvre or an appetizer, especially if combined with boiled meat or spread on a simple slice of hardwheat bread.

Ingredients: romanesca zucchini, extra virgin olive oil, white vinegar (sulphites), salt, mint, basil, garlic, chilli pepper, black pepper.
