A typical product of Italian winter countryside. The cauliflower is slowly processed to become smooth-textured, then it is seasoned in a sauce pan according to the traditional recipe. The result is a cream suitable to prepare appetizers and hors-d’oeuvres. To taste it better, we recommend serving lukewarm and spreading it in generous amount on a slice of homemade bread.

Ingredients: Roman cauliflowers, pumpkins, white vinegar (sulphites), evo oil, capers, salt, garlic, chilli.
