We have borrowed the classical seasoning of game sauces from our peasant culture to obtain a savory paste. It is entirely made of vegetables, enjoyable as an appetizer or spread on a slice of toasted bread. You can also dare using it as dressing sauce for a plate of egg pasta or as “ravioli” stuffing.
Ingredients: artichokes, evo oil, green olives, white vinegar (sulphites), capers (capers, water, salt, acidity regulator: citric acid), parsley, lemon rind, rosemary, sage, chilli, garlic, bay leaf, salt.
